Pancetta

Fat is flavour, and it is this layer of creamy fat surrounding the meat only found on traditional breed pigs, that makes our pancetta so irresistibly delicious. We cure joints of pork belly with a blend of herb and spices (including nutmeg, thyme, juniper and garlic) before hanging for four weeks to develop the flavour.
