Air Dried Lamb

The recipe might well be Roman, but the taste is nothing but British. We use the best lamb from a farm in nearby Brill, marinate it in red wine and add the punchy flavors of pepper, rosemary and juniper berries, mimicking the recipe from the Roman times, before leaving it to air dry to enhance the flavour. Our Air Dried Lamb won a Great Taste Award in 2016.
